Marmalade Duck

2 large ducks (mallards or equivalent)
1 half pkg. small carrots
3 celery stalks
1 medium onion
1 to 1 1/2 tsp. salt
1 tsp. Garlic powder
1 cup hot water
6 tbsp. orange marmalade
One half can (16 oz.) frozen orange juice concentrate, thawed

Preheat oven to 375 degrees F.

Combine all ingredients except ducks and pour into a large roasting pot. Prick duck skins with a fork. Add your ducks to the pot.

Cook ducks at 375 degrees F. for 2 hours until it tests tender. Add water or stock if necessary. Pour drippings in bowl and remove fat. Remove vegetables and blend on high, then return to pot. Correct seasonings and serve with ducks.
